Srilankan Yellow Rice
This recipe is close to its original form. There are only two minor changes.1.
refineed vegetable oil is used instead of original coconut oil which may
not be relished by most Indians except those from the West coast. 2. Rampe,
a leaf used for seasoning is not easily available. This is a sword leaf
which smells like Basmathi rice.
Ingredients:

small grained raw rice 2 cups (500 gms)

onion 1, chopped

coconut or refined vegetable oil 1 tbsp

grated coconut 2 cups
-
rampe, if available 3 cm piece
-
curry leaves a few
-
cardamom 3
-
cloves 3
-
cinnamon 2 cm
-
black pepper corns 1/2 tsp, crushed

garlic 2 flakes minced
-
salt to taste
-
turmeric powder 1/2 tsp
Method:
Wash the rice. Extract two cups each of first and second milk from coconut.
Heat oil in a kadai and add all the spices, rampe and curry leaves. Fry
till onion is brown. Add the rice. Fry for two minutes. Add all the coconut
milk, turmeric powder and salt. Cover and cook over a low flame till all
the liquid is absorbed and the rice is tender. Serve hot with a kurma or
curry.
