Minestrone Soup
Serves 6-8
Ingredients:

garlic flakes 6

Haricot beans (soya beans or rajma beans can also be added) 2 tbsp

cooked noodles 2 tbsp

grated cheese 2 tbsp

cream 2 tbsp

oil 2 tbsp

flour 2 tbsp
-
salt 1 1/4 tsp

sugar 1 tsp

pepper powder 1/2 tsp

milk 1 cup
Method:
Soak beans overnight in water; wash and cook till tender. Chop all the
vegetables. Heat oil in a pressure cooker, add onion, garlic and cloves
and fry till onion is light gold in color. Add tomatoes and carrot and
fry till the tomatoes become soft and mushy. Add flour and fry till raw
smell of the flour disappears. Pour four cups of water, add salt, sugar
and pepper powder. Pressure cook for ten minutes. When cold, liquidise
the soup, strain and keep aside. Mix in milk, the cooked beans and noodles.
Serve hot garnished with a sprinkling of cheese and a dollop of cream
