Cabbage Rice
Ingredients:
- rice 1 cup
- cabbage 3/4th of the whole vegetable
- onion 1
- oil 2 tsp
- turmeric powder 1/4 tsp
- salt to taste
- fresh coconut 1/4 cup
- roasted gram 2 tbsp
- green chillies 6
- ginger 1/2" piece
- coriander leaves 1 bunch
- mustard seeds 1 tsp
- urad dal 1 tsp
- chana dal 1 tsp
- cumin seeds 1 tsp
- red chillies 1
- cashews 3
- coriander leaves to garnish
- curry leaves to garnish
Method:
Cut the onion finely. Cook the rice and cool them. Grind together coconut, roasted gram, green chillies, ginger and coriander leaves(the whole bunch) to a fine paste.
Heat oil in a pan and add mustard and when they splutter add urad dal, channa dal, cumin seeds and red chillies. When they are brown, add the onions and fry well that is
till they turn to golden brown in color. Add the chopped cabbage and cook till the cabbage is done. While cooking add the ground paste, salt and a pinch of turmeric powder.
When the cabbage is well cooked add the cooked rice and carefully mix them in a low fire. When the rice is well mixed with the cabbage mixture, garnish with coriander and
curry leaves. Remove and serve with any raita.
