Capsicum Rice
Ingredients:
- rice 2 cups
- capsicum 4
- coconut grated 4 tsp
- turmeric powder a pinch
- oil 1 tsp
- mustard seeds 1 tsp
- channa dal 1 tsp
- cumin seeds 1 tsp
- urad dal 1 tsp
- red chillies 1
- curry leaves a few
- cashewnuts a few
- groundnuts a few
- red chillies 6(to grind)
- cinnamon 1" piece
- coriander seeds 2 tsp
- cumin seeds 1/2 tsp
- black gram dal 1 1/2 tsp
- bengal gram dal 1 1/2 tsp
Method:
Cook rice and spread them in a sheet or a plate to cool them. Cut the capsicums into a bite size pieces. Grind to a
fine paste red chillies, cinnamon, coriander seeds, cumin seeds, black gram dal and bengal gram dal after they are
fried in little oil. Heat oil in a pan and add mustard. When they splutter add urad dal, channa dal, red chillies,
cumin seeds, curry leaves, cashews and groundnuts. Fry till they are brown.Add the cut capsicum and fry them till tender.
Add turmeric powder and coconut to the capsicum(if desired coconut can be ground along with other ground ingredients). Add
the ground paste to the capsicum and cook for 5 minutes or till you get a nice aroma. Add the cooked rice and mix them well.
Be carefull becos the rice might stick if you leave without stirring. When the rice is well mixed remove from fire and serve hot.
