Burmese Yellow Rice With Shredded Pancakes
Ingredients:

1-1/2 cups rice

2 cups coconut
-
1/2 tsp turmeric powder

salt to taste

3-4 cardamoms
Ingredients:

1 cup gram flour

1/4 cup grated onions

3 finely chopped green chillies

2 tbsp coriander leaves
-
2 tbsp coconut

a pinch of turmeric powder
Method:
Wash rice and soak for 10 minutes. Boil coconut milk in a cooker pan. Add
the rice, turmeric powder, salt and cardamoms and simmer till the milk
evaporates. Put it in the pressure cooker with more water to cook the rice.
Cook till done. Take in a serving plate and decorate with shredded pancakes.
Method To Prepare Pancakes:
Combine all the ingredients in a vessel and add enough water to make a
pancake batter. Shallow fry the pancake on a heavy iron skillet or a non-stick
skillet till light brown in color. Remove on a board and shred them into
long strips.
