Brinjal Pulav
Ingredients:
- rice 1/4 kg
- cardamom 2
- cinnamon 1" piece
- onion 1
- ghee 2 tsp
- brinjals 1/4 kg
- mustard seeds 1/2 tsp
- turmeric powder 1/4 tsp
- salt as required
- curry leaves few
- cashewnuts 1 1/2 tbsp
- fresh grated coconut 1 tbsp
- pepper 1/4 tsp
- coriander seeds 2 tsp
- channa dal 1 tsp
- urad dal 1/2 tsp
- red chillies 4
- asafoetida a pinch
Method:
Cook the rice in a pressure cooker and cool them till the grains are separated. chop the onions fine. Now heat a little ghee and fry the masala spices along with onions. Cut the brinjal into long pieces and add them to the onions. Fry pepper, coriander seeds,
urad dal, channa dal, red chillies and asafoetida in a little oil. Fry coconut separately till light brown. Grind these fried ingredients to a fine paste. Add this paste to the brinjal mixture. Fry the mixture till good smell comes. Add the rice when the brinjal is
done. Adjust salt and remove from fire.
