Vegetable Soup With Rice Dumplings
Ingredients For The Soup:

Tomatoes 1/2 kg

Carrots 1/4 kg

Spring onions,chopped 1/2 cup

Garlic chopped 1 tsp

Celery, chopped 1 tsp

Cornflouyr 1 tbsp

Salt, sugar and pepper to taste

Butter 2 tbsp
Ingredients For Dumplings:

Cooked rice, mashed 1 cup

Flour 1/4 cup
-
Salt, pepper to taste

Big pinch of soda-bi-carb

Finely chopped coriander leaves 1 tbsp
Method:
Cut tomatoes and carrots into pieces and make puree. Melt butter and saute
onions, garlic and celery till soft. Add puree and enough water to make
six servings. Add salt, pepper and sugar to taste. Allow to simmer for
10 minutes.
Prepare dumpling mixture by mixing all the ingredients. Make tiny balls.
Put them in the boiling soup. Simmer for 5 minutes. Serve hot.
