Vegetable Cutlet
Ingredients:

Boiled and mashed potatoes 6

chopped beans 1/2 cup

peas 1/2 cup

coriander leaves 1/2 cup

chopped beatroot 1/4 cup

mint 1/4 cup

onion 1

garlic 6 flakes

ginger 1 cm

green chillies 4

oil 3 tbsp

chilli powder 1 tsp

salt 3/4 tsp

garam masala powder 1/4 tsp

Maida 1 cup

Bread crumbs 1 1/2 cups
Method:
Chop the onion, boil all the vegetables and keep aside. Grind ginger, garlic,
green chillies, coriander leaves and mint into a fine paste. Heat oil in
a pan, add the onion and fry till light gold in color. Add the ground paste
and fry till the raw smell of garlic disappears. Add quarter cup of maida
and fry till well roasted. Put in vegetables, mashed potatoes, garam masala
powder, chilli powder and salt. Fry well. THe mixture must be dry or the
cutlets will break while frying.
Mix remaining maida with quarter cup of water. Make balls of the vegetable
mixture, dip into the maida batter, flatten and roll in bread crumbs. Shape
the cutlets into an oval or round shape, deep fry or shallow fry with oil
till golden brown in color. Serve hot with sauce or chutney.
