Vangi Bath
Ingredients:
- rice 1 cups
- brinjal 1/4 kg
- green chillies 3
- small onions 1/2 cup peeled
- tomatoes 3 or 4
- oil 2-3 tbsp
- salt to taste
- turmeric powder 1/2 tsp
- curry leaves a few
- red chillies-6
- cloves 2
- cinnamon small piece
- ginger 1/2 inch piece
- mustard seeds 1 tsp
- urad dal 1 tsp
- channa dal 1 tsp
Method:
Cook rice and allow them to cool. Dice brinjals and soak them in salted water. Slit green chillies into 2. Grind red chillies, cloves, cinnamon
and ginger to a smooth paste. Cut tomatoes finely. Heat oil, add mustard, urad dal and channa dal. Then fry green chillies and small onions for a few
minutes. Add brinjals, tomatoes, ground masala paste, salt, turmeric powder and little water. Cook till brinjals are tender. Add the rice and fry well.
