Tomato Saar
Ingredients:
- 4 cups cubed tomato
- 1 green chilli
- 1 cup coconut
- 1 cup hot water
- 1 tbsp cornflour
- 3 1/2 tsp salt
- 4 tsp jaggery
- 6 curry leaves
- 2 tbsp coriander for garnishing
Method:
Pulp tomatoes and green chillies, grind them, strain and keep aside. To extract coconut milk, grind coconut with half quantity
hot water and grind. Squeeze out the milk through a strainer. Repeat process again to get the second coconut extract. Heat ground
tomatoes add salt and jaggery. When about to boil, add coconut milk-cornflour mixture. Boil over a low flame for just a moment.
Remove and garnish.
