South Indian Pulav
Ingredients:
- rice 1 cup
- tomato puree 1/3 cup
- 1 large onion
- 1 cup vegetables(preferably peas and carrots)
- 1/4- 1/2 tsp coriander powder
- 1/8-1/4 tsp garlic powder or 1 1/2 cloves garlic
- 1/8-1/4 tsp ginger powder or 1/4" piece ginger
- 1/8-1/4 tsp chilli powder
- 1 green chilli cut into small pieces
- 1 tsp salt
- 1 tsp coriander leaves
Method:
Clean the rice with water and set aside. Cut the onions lengthwise. Fry the onion and cardamom in butte for 4 minutes. If you are using green chillies, then add the chilli. Add bay leaf, cloves, cinnamon
and fry until the onions turn golden brown Add the garlic and ginger paste. Add dhania powder and chilli powder. If you use green chillies you can avoid chilli powder. Add the tomato puree and 1 cup of water and
bring the mixture to a boil. Add the vegetables, rice and salt. If you like coconut add 1/4 cup of coconut flakes. Reduce the flame and cover the vessel. After about 4 minutes stir the mixture. Cover the lid again and
wait until cooked. Sprinkle on the coriander leaves at the end.
