Pullipu Kootu
Ingredients:
- chow-chow 1 or 2
- chana dal 3/4 cup
- tamarind lemon size
- salt 1 1/2 tsp
- coriander seeds 1 tsp
- red chillies 6
- salt to taste
- asafoetida 1 small pinch
- mustard 1/4 tsp
- coconut grated 3-4 tsp
- urad dal 1 tsp
Method:
Wash, peel, chop and cook the vegetable. Soak the tamarind and take 1 cup of tamarind and water solution. Heat oil and fry coriander seeds, red chillies, 3/4 tsp urad dal and
asafoetida. Fry coconut in the same vessel. Grind all these fried ingredients together to a fine paste. Now boil the tamarind solution. Add the cooked vegetable along with salt, turmeric powder,
salt and asafoetida powder. Add the ground paste to the boiling tamarind solution when the tamarind flavour subsides. After 5 to 10 minutes add the cooked channa dal. Keep stirring.
Heat oil and fry mustard seeds and urad dal and season the kootu with mustard and urad dal. Serve hot.
Note: Instead of chow-chow, cabbage can also be used.
