Plain Kootu
Plain Kootu
Ingredients:
- vegetables 8-10 cups
- coconut(large) 1, grated
- green chillies 10
- cumin seeds 1 tsp
- coconut oil 2 tbsp
- curry leaves 4 sprig
- a pinch of turmeric powder
- salt to taste
- rice 1 tsp
- urad dal 1 tsp
- mustard 1 tsp
Method:
Cook the vegetables in a little water with a pinch of turmeric powder and a pinch of salt, drain and keep aside. Grind the coconut, cumin seeds, green chillies and rice into a smooth paste by sprinkling little water and keep aside.
Take the vegetables in a vessel with the water used to cook the vegetables and dissolve the paste in the vegetables Mix carefully(so that the cooked vegetables do not get squashed) and bring to a boil. Shut off
the flame, add the curry leaf sprigs. Heat coconut oil and fry mustard seeds and urad dal and add them to the kootu. Add salt to taste and serve hot.
Note: Plantain(raw) or amaranth stem or ashgourd or pumpkin can only be used singly in this variety.
