Masala Dosa

Soak urad dal in water and keep aside. Soak rice(both together) in water. After 3 hours drain urad dal and rice separately. Grind urad dal into a smooth paste, sprinkling water as little as possible. Grind rice into a smooth paste sprinkling as little water as possible. Mix both the pastes, maida flour and salt by hand. Leave the batter overnight to ferment. Prepare potato massala dosa curry(as mentioned in the side dish). Prepare coconut chutney and keep aside. Heat a griddle, smear it with oil all over and spread the batter, thin and round; pour a tsp of oil around its circumference and spread another tsp of oil over the surface of the dosa;cook until the underside turns deep brown; and place a tsp of chutney all over the surface of the dosa; place a tbsp of curry at the centre of the dosa and fold the dosa into a semicircle and serve.
