Lotus Stem Pickle
Ingredients :

Lotus stem 1 piece (12")

Green chillies 8-10

Ginger (peeled and sliced) 1/4 cup

Lime juice 3 tbsp

Chilli powder 2 tbsp

Mustard powder 2 tsp
-
Asafoetida 2 pinches
-
Turmeric 1/4 tsp

Salt to taste
Method:
Wash, peel and slice the stem into rounds of 1/4". Cut green chillies into
1" long pieces; mix with ginger slices and add salt and leave for two days.
Add the rest of the ingredients and shake well. Use after 6-8 weeks. A
tangy and crisp pickle is ready to use.
