Khao Phat Khamin
Ingredients:
- Oil 1/4 cup
- Minced garlic loves 10
- Minced ginger 1/2 inch
- Coarse textured vegetable protein (nutranugget) 1/2 cup
- Cubed sweet potatoes 1/2 cup
- Red pumpkin, cubed 1/2 cup
- Cubed onions 1/2 cup
- Cubed tomatoes 1/2 cup
- Red chilli powder 2 tsp
- Turmeric powder 1/2 tsp
- Soya sauce 3 tbsp
- Black pepper powder 1/2 tsp
- Salt to taste
- Cooked rice 2 cups
- Spring onions to garnish 2-3
Method:
Heat oil in large kadai. Add garlic and ginger. Fry till fragrant. Add nutranuggets and stir for a minute. Add sweet potatoes, red
pumpkin, onions. Stir fry for a few minutes. Cover and reduce heat. Cook till almost done. Add tomatoes, red chilli powder, turmeric
powder. soya sauce, black pepper and salt. Mix well. Add and mix cool rice. Cover and cook on low heat for 5-7 minutes for the flavor
to set in the rice. Serve hot garnished with spring onions.
