Honey Orange Marmalade
Ingredients:

Honey 700 gms

Orange 1.20 kg

Water 1/2 litre

Sugar 350 gms

Juice or two lemons
Method:
Peel rind thinly from 1/4 kg of oranges and cut into thin strips. Cut all
the oranges in half. Squeeze out the juice. Tieup the pips in a muslin
tag. Put orange and lemon juice in a container with water. Add the sliced
peel and the muslin bags of pips to the pan. Simmer for 1 1/2 hours till
the liquid is reduced to half. Take out the bag of pips and squeeze any
liquid from it into the pan. Stir in the honey and sugar and boil rapidly
till the setting point is reached. Cool a little, stir well to mix in the
peel. Pour hot into jars.
