Green Jade Curry
Ingredients:

chopped coriander leaves 2 cups

grated coconut 1/4 cup

roasted gram dal without skin 1 tbsp

cashewnuts 2 tbsp

ginger 1/2" piece
-
green chillies 6-8
-
garam masala 1/4 tsp
-
cummin seeds 1 tsp
-
sesame seeds 1 tsp

juice of half a lemon
For Curry:

oil 1/4 cup

salt to taste

coconut milk 2 cupsrice flour 1 tbsp

mixed vegetables (peas, cauliflower, potatoes) 1 kg
Method:
Heat oil and saute masala paste till oil separates. Mix rice flour with
coconut milk and add to the sauted masala paste. Stir till it boils. Add
vegetables and salt to taste. Mix and heat till the mixture starts boiling.
Reduce heat and simmer till vegetables are cooked. Adjust water if needed.
Serve the curry hot with rice or paratha.
