Green And White Vegetable Pulao
Ingredients For Green Vegetable Pulao:

1/2 cup mixed vegetables (fresh beans, carrots and green peas boiled)

1 cup rice

2 tbsp curd
-
2 tbsp ghee
-
2 cups hot water

Salt and pepper to taste
Ingredients For Masala Paste:

1/4 cup chopped coriander leaves
-
1/4 cup chopped onion
-
4 cloves garlic
-
3 green chillies
-
1/4" ginger
Ingredients For White Pulao:
-
1 cup rice
-
2 tbsp curd
-
2 tbsp ghee
-
2 cups hot water
-
Salt to taste

1/2 cup corn, boiled
Ingredients For Masala Paste:
-
1/4 cup grated coconut
-
1/4 cup chopped onion
-
4 cloves garlic
-
3 green chillies
-
1/4" ginger
-
1/2 tbsp poppy seeds
-
1/2 tsp cummin seeds
Method:
Mix salt and pepper to the vegetables and spread them at the bottom of
a mould. For green pulao, melt ghee in a vessel and add green masala paste.
Saute for a few minutes. Add rice and saute for 2 mins. Add 2 cups water
and salt to taste. Cook on medium heat till rice is cooked and water is
absorbed. Mix curd. For white pulao, melt ghee in a vessel, add masala
paste and saute for a few minutes. Add rice and saute for 2 minutes. Add
water and salt to taste. Cook on medium heat till rice is cooked and water
is absorbed. Mix curd and corns. Spread green pulao on the vegetable layer
in the prepared mould. Level and press lightly. Spread white pulao on it.
Level and press lightly. Unmould on a serving plate. Decorate with lemon
slices, carrot pieces and green peas. Serve hot.
