Avocado Salad
Ingredients:
- Boiled rice 2 cups
- Corn grain boiled 1 cup
- Tomatoes, diced 2
- Avocado, diced 1
- Onion, finely chopped 2
For Dressing:
- Pepper and salt to taste
- Juice of 2 lemon
- Olive oil 3 tbsp
- Green chillies, finely chopped 2
Method:
Mix the rice, boiled corn, diced tomatoes and avocadoes and onions in a large bowl. Pour the dressing over the mixture. Mix well. Cool in the refrigerator and
serve cold.
