Ennai Kathirikai Kozhambu



Soak tamarind in 1 1/2 cup water. Add salt to this tamarind and water solution. Heat oil in a pan and add fenugreek seeds. When they turn brown add red chillies, toor dal, channa dal, asafoetida and urad dal and fry. Now grind them into powder along with little salt. Cut the brinjals in such a way that it holds the ground powder. Add the ground powder into the brinjals. Heat oil in a pan and add mustard seeds. When they crackle add turmeric powder and the brinjals. When the brinjals are done add the tamarind and water solution. When the aroma of tamarind subsides, add the rest of the powder(if any). Garnish with curry leaves and serve hot.
