Vegetable Kurma
Ingredients:

Potatoes 115 gms

Green Chillies 4

Grated Coconut 1/2

Ginger paste 1 tsp

Garlic Paste 1 tsp

Chilly powder 1/2 tsp

Chopped Coriander leaves 1 tsp

Aniseed 1 tsp

oil 4 tbsp

Cinnamon 4cm piece

Salt to taste
Method:
Wash and cut the vegetable into even size pieces. Slice onion and green
chillies. Grind the coconut and aniseed together to a smooth paste. Heat
the oil. Add cinnamon, cardamom and cloves. When it turns brown add onion
and chillies. When it becomes transparent add ginger and garlic paste.
When the aroma comes add all the vegetables and fry for a few seconds.
Add the chilli powder and coriander powder. Stir well and add one cup water
and salt. Cook till the vegetables are done. Mix the ground coconut in
a little water and add to the vegetables. Add coriander leaves. Simmer
and remove from fire.
