Ntomatoes Me Rize- Tomatoes Stuffed With Rice

Cut off the tops of tomatoes. Check whether they can stand upright. Scoop out the pulp with a spoon. Strain the juice to remove seeds and chop the remaining pulp. Sprinkle the inside with salt, pepper and sugar. Heat oil and add onions, washed and soaked rice. Saute for a few minutes. Add chopped tomatoes, salt to taste and enough hot water. Cook till rice is almost done. Mix in cooked haricot beans, pepper and half the cheese. Also add currants or olives. Cook till water is totally absorbed. Remove from heat and stuff the rice in each prepared tomato. Top with the remaining cheese. Arrange them in an oven-proof plate and bake at 200°C for 1/2 an hour. Serve hot or cold.
