Cook the moong dal and keep aside. Heat oil in a pan. And season with cumin seeds and ajwain seeds. Now add garlic and ginger to this and fry for a second. Then add the chopped tomatoes. When they are tender add the moong dal along with the water which is used to cook. Now add salt and sugar along with lemon juice. After 1 or 2 minutes; add the cut spinach. This spinach can be pre cooked also. Cover the pan and keep stirring occassionally till the spinach is tender.
