Rice Noodles WIth Stir Fried Vegetables

Method:

Prepare rice sticks as per instructions on the pack and keep aside. Peel and cut carrots into thin strips like matchsticks. Remove seeds from capsicum and cut into thin strips. Slice the onion. Heat oil, fry garlic and ginger till fragrant. Add onion and fry till light brown. Add carrots and capsicum and fry till tender but crunchy. Add spring onion, fry till just wilted. Add curry powder and turmeric powder, fry for a few seconds. Add salt. Combine all the ingredients for sauce and add to the vegetable mixture. Bring to a boil and simmer for 2 minutes. Add rice sticks, stir till they are coated with the sauce. Serve immediately. The noodles and vegetable mixture can be prepared ahead. Just before serving, reheat the vegetable mixture, add the noodles.
