Pepper Kozhambu
Ingredients:
- tamarind size of a small lemon
- pepper 1 spoon
- red chillies 3-4
- urad dal 1 tsp
- toor dal 1 tsp
- asafoetida a pinch
- salt 1 tsp
- curry leaves a few
Method:
Soak the tamarind in 2 cups of water. After 10 minutes squeeze the tamarind retaining the tamarind and water solution. Add salt and curry leaves to this tamarind
solution. Fry pepper, red chillies, urad dal, toor dal, curry leaves and asafoetida in little oil and grind them into a smooth paste. Add this paste to the tamarind
solution and boil the solution. When the tamarind aroma subsides and the solution thickens in volume remove from fire. Season with mustard seeds. Can add jaggery to this
sambar if desired.
