Orange Mocha Delight
Ingredients:

Fresh curd 3 cups

Soft paneer 1 cup

Eggs 5 seperated

Sugar 1 cup, powdered coarsely

Strong coffee 1 cup, without milk and sugar

Orange juice 2 tbsp

Sponge cake 300 gms

Cocoa 1-2 tsp
Method:
Tie the curds in a thin cloth and hang till most of the whey is drained
and one cup of thick curd cheese is left. Blend this with paneer in a mixie.
Beat the egg yolkes with 3/4 of the sugar till light and creamy. Mix with
the cheese mixture. Beat the egg whites stiffly and fold in. Dissolve remaining
in coffee and add the orange juice. Cut the cake into thin slices. (sponge
fingers can be used). Dip them in coffee and cover the base of a pudding
dish with a layer of cake. Spread half the cheese and egg mixture over
it. Arrange a layer of cake slices, dipped in coffee over it. Cover with
the remaining cheese and egg mixture. Sprinkle cocoa on top. Keep in the
refrigerator for several hours. Serve chilled.
