Onion Mango Pickle
Ingredients:

Mango Pieces (cut fine) 1 kg

Small onions (peel and chop) 250 gm

Chilli powder 125 gms

Mustard seeds 1 tsp

Fenugreek seeds 1 tsp

Asafoetida powder 1/2 tsp

Salt 160gm

Gingelly oil 200 ml

Jaggery(grated) 50 gm
Method:
Heat oil and add mustard seeds. When it crackles, add the curry leaves
and allow them to crisen. Stir in the mango and onion pieces. Cook till
the mango becomes translucent and the oil seperates. Pour in the remaining
oil. When it gets hot, add the chilli fenugreek and asafoetida powders
and remove. The pickle lasts for a month.
