Noodle Salad
Ingredients:
- Noodles, 1 small packer
- Carrots finely shredded 2
- Capsicum, shredded 1
- Cauliflower, broken into florets and boiled 200 gms
- Coriander leaves, finely chopped, 1 tbsp
- cabbage, finely chopped 1/2 head
- Green chilly finely chopped 1
- Boiled peas 1 cup
Dressing:
- Soya sauce 2 tbsp
- Vinegar 1 tbsp
- Tomato ketchup 1 tbsp
- Capsico 1 tsp
- Salt and white pepper to taste
Method:
Boil the noodles. Run them through cold water. Rub refined oil over them and keep aside. In a large bowl pour half the dressing. Add the cooled
noodles, boiled peas, cauliflower, cabbage, chilli, chopped coriander leaves, carrots and capsicums. Mix gently. Pour the rest of the dressing on top
and then mix well again. Serve cold. Makes an excellent accompaniment with a soup and is a complete meal by itself.
