Layered Sandwich Bhajji

Ingredients:

Mint Chutney:

Grind together

Method:

Trim brown crusts from bread slices. Apply butter to one side of all slices. To one slice apply 1 tsp of mint chutney on top of butter. Keep another slice on top.(buttered side up). Apply 1 tsp of tomato chutney and seal with another slice of bread. (3 slices on top of the other). Make all the slices in the same manner. Cut each block into 4 square pieces. Dip in bajji batter to coat it well and deep fry in hot oil till crisp and brown.

For Bhajji Batter:

Method To Make Bhajji:

Mix all ingredients in bowl. Pour water gradually and mix the flour without forming lumps till the batter reaches a dropping consistency.

Note: To obtain crisp bajjis, omit maida and add more rice flour. Do not add more soda which makes the bajji to consume more oil.

Tomato Chutney:

Method:

Fry masala spices and then onions till crisp in oil or ghee. Add tomatoes and fry till moisture is absorbed. Mix other ingredients and remove from fire. Grind to smooth paste.
