Ingredients:

Cubed bean curd 1 cup

Potatoes cubed, boiled 1 cup

Bamboo shoots; cubed (tinned) 1 cup

Coconut milk 3 cups
-
Soya sauce 3 tbsp
-
Demerara or palm sugar 1 tbsp
-
Small bundle of lemon grass 1
-
Lemon leaves 2
-
basil leaves 10

Salt to taste
For The Green Spice Mixture:
-
Green hot chillies 10
-
Sliced onions 1/2 cup
-
Garlic cloves 10
-
Ginger 1/2 inch
-
Lemon rind 1/2 tsp
-
Chopped coriander roots 1 tsp
-
Pepper corns 5
-
Roasted cumin seeds 1 tsp

Roasted coriander seeds 1 tsp
Method:
Prepare a paste of all green spice ingredients. Take 1 cup of coconut milk
in a kadai and heat it. Add green spice paste. Mix till the oil separates
and floats on top. Add remaining coconut milk and boil. Add bean curd,
potatoes, bamboo shoot, soya sauce, sugar, bundle of lemon grass, lemon
leaves and salt to basil leaves. Remove the lemon grass bundle. Serve hot.
