Grated Mango Pickle
Ingredients:

Thickly grated mango(peel and grate) 1 kg

Gingelly oil 600 ml

Mustard seeds 50 gm

Chilli powder 75 gm

Asafoetida powder 2 tsp

Turmeric powder 1 tsp

Fenugreek powder 1 tsp

Cummin powder 1/2 tsp

Salt 150 gm
Method:
Heat half of the oil and add mustard seeds. When it crackles, add the grated
mango, turmeric powder and salt. Bring to boil and stir gently, adding
a little oil from time to time. Cook till the mango becomes translucent
and the oil seperates. Pour in the remaining oil. When it gets hot, add
the chilli. fenugreek and asafoetida powders, blend well and remove. It
lasts for 6 months.
