Cucumber And Musambi RIng
Ingredients:

Hot water 1 1/2 cups

Pineapple jelly 90 gms

Lemon juice 1/4 cup

Grated cucumber (drained) 1/4 cup

Chopped capsicum 1/4 cup

Musambi sections 400 gms

Salad greens, chopped spinach, etc
Method:
Pour hot water over gelatine in medium bowl. Stir till it dissolves. Stir
in lemon juice. Mix well. Refrigerate till lightly set (1/2 hour) Fold
in cucumber, capsicum and musambi. Turn into one-quarter ring moulds. Refrigerate
for 2 hours until firm. To unmould, run a spatula around edge of mould
to loosen. Invert on serving plaster.
