Coriander Pulav
Ingredients:
- rice 2 cups
- cloves 2
- cinnamon 1" piece
- onion 1
- potatoes 2
- tomatoes 2
- peas 1/2 cup
- oil 2 tsp
- salt to taste
- coriander leaves 1 bunch
- ginger 1/2" piece
- green chillies 3
- cumin seeds 1/2 tsp
- fresh coconut 4 tbsp
Method:
Cook rice till the grains are separated. Spread them in a plastic sheet and cool them. Heat oil and add the masala spices. Cut onions lengthwise. Cut tomatoes into small pieces. Peel and cut potatoes. Add the onions to the masala spices and fry them till
golden brown. Add tomatoes when they are ready. Fry till the tomatoes are tender. Add the diced potatoes and cook them. Add salt. Grind coriander leaves, cumin seeds, green chillies, coconut and ginger into a fine paste. Add this paste to the potato mixture when the
potatoes are cooked. When a nice aroma comes, add the cooked and cold rice and mix well.
