Chinese Fruit Salad
Ingredients:

ginger 4 cm

pear halves 1 can
-
lime juice 2 tsp
-
fresh or tinned litchis 10-12

bananas 2 sliced
-
cherries a few
-
almonds 4
Method:
Thinly shred 1/2 the ginger. Crush the rest and extract 2 tsps of juice.
Drain the pears from the syrup and keep aside. Add the ginger and its juice
to the syrup and boil till it is reduced to half its volume. Add the lime
juice. Blanch and peel the almonds. Arrange pear halves and banana slices
on a plate. Place a litchi in each pear half, and top with a cherry. Pour
the syrup over it Sprinkle with almonds. Serve chilled.
