Chinese Fried Rice
Ingredients:
- pulav rice 500 gm
- onions 115 gm
- cloves 4
- cinnamon 2-3 gm
- cardamom 3-4
- aniseeds 1/2 tsp
- bay leaves 1
- fat 50 gm
- salt to taste
- Mixed vegetables like carrots, cauliflower, cabbage, beans, capsicum, peas 2 cups
Method:
Slice onions. Chop the vegetables. Clean and soak the rice. Heat fat in a pan and add whole masala spices. Add the cut onions and fry them till golden and crisp. Add the chopped vegetables. Add some salt. Now add the soaked rice and fry them. Add hot water to the rice and cook. You can cook the rice directly by keeping them closed with a lid. Otherwise, grease
an oven tray and spread half of the rice. Spread the vegetable masala on top of the rice. Again spread the rest of the rice on top. Cover this with an aluminium foil and bake in a moderate oven for 20 minutes.
