Wash and wipe the brinjals dry. Then apply some oil on them and dry roast on a flame till the skin turns black and the brinjals are cooked. In a mixing bowl put in the finely chopped onion, green chillies, grated coconut and vinegar. Now peel the brinjals and mash the pulp. Add this pulp to the mixture in the bowl. Add salt to taste and mix lightly. Serve chilled.
