Vegetable Upma

Dry roast the rava until light brown. Heat the oil in a pan and add the mustard seeds and after they pop add the urad dal. When it turns slightly brown add red and green chillies and onion. Saute till it softens. Add the mixed vegetables and saute some more. Add 4 cups of water, salt and asafoetida. When the water boils add the rava while stirring constantly. After 2 or 3 minutes, cover the pan and cook over a low flame for 7 minutes. Serve hot.
Note: You can cook the vegetables separately and add them instead of fresh vegetables. Also you can cook the rava separately, that is boil 1 cup of water and add the roasted rava and cook for 1 or 2 minutes and then add them to the cooked vegetables. In this case you need not add water to the cooking vegetables separately.
