Cut the vegetable into bite sized pieces. Add tamarind water to the vegetable along with 1/4 tsp turmeric powder and 1/4 tsp salt. Cook this with a very little water if using microwave or pressure cook this adding little water to this container and adding little water to the cooker base till 1 whistle. Now heat oil in a pan and fry coriander seeds, urad dal, chana dal, red chillies. Remove them and add coconut to this and fry. Dry grind these to a coarse powder. Heat oil in a frying pan and add the seasonings, when the mustard splutters add the vegetable after draining the water from it. Add salt and asafoetida. After 2 minutes add the ground powder. Fry for further minute and remove.
