Tender Cucumber Pachadi

Cucumber need not be peeled sinced it is tender; nor is it necessary to discard the seeds.

Method:

Chop the cucumber fine, add salt to taste, mix well and keep aside. After 15 minutes, squeeze out the water, retaining the vegetable. Add curd(it should not be sour) to the vegetable proportionately, mix well and season with mustard and green chillies, fried in oil. Garnish with coriander leaves, add some more salt if necessary and serve.
