Soya Stuffed Tomatoes



Cut off 1/3rd of the tomatoes and scoop out the pulp. Put all this pulp and 1/3 pieces of tomatoes into a mixer and make puree. Sprinkle a little salt in each tomato. Soak soya granules in salted hot water for 15 mins. Drain and squeeze out water. Heat oil and add tomato puree. When it boils, add cooked rice, soya granules, green peas, coriander leaves, coconut, green chillies, red chillies, half of the grated cheese and salt to taste. Cook this mixture till it collects into a ball. Fill this mixture in each prepared tomato. Top with grated cheese. Arrange these tomatoes in a greased baking dish. Bake at 200°C medium heat for 25 to 30 minutes till tomatoes are cooked but not mushy.
