Rajasthan Soya Vegetables

Method:

Soak soya chunks in salted hot water for 15 mins. Drain and squeeze out water. Heat oil, add pieces of potatoes, carrots and french beans. Mix and saute for a few minutes. Add asafoetida, turmeric and salt to taste. Mix well. Add 1/4 cup water and cover. Cook for 10 minutes until vegetables are almost cooked and water is absorbed. Add and mix cooked soya chunks and all the rajasthani masala ingredients. Mix and saute for a few minutes more. Take out vegetables in a serving bowl. Sprinkle coriander leaves and serve hot.
