Pumpkin Syrup

Method:

Take a big thoroughly ripe pumpkin. Wash well and remove the seeds and soft centre. Cut the flesh with skin into small cubes, cover with water and boil until soft. Put into a jelly bag. When all the juice has drained, put into a pan and boil for 30 minutes, then measure the juice and put one cup of sugar to each cup of juice and boil again until thick. Serve with toast or pancakes.
