Place the pineapple ring on individual serving plates. Whip the cream lightly with the icing sugar and a few drops of pineapple essence. Spread this cream equally on the pineapple rings leaving out the centres. Sprinkle the grated cashewnuts on top of the cream spread. Place a glazed cherry in the center of each pineapple ring and stick a small sprig of fresh mint by the side of the cherry. Serve slightly chilled.
