Pour the milk in a clean saucepan. Then add the sugar and heat till the sugar is dissolved. Make a paste with the cornflour and a little water and add it to the simmering milk. When a soft custard is formed, keep the saucepan down and add the essence. In a serving dish pour in half the custard. Then sprinkle the pineapple pieces on top. Spread the rest of the custard over the pineapple pieces and refrigerate till serving time. Decorate with glazed cherries.
