Nuts And Dried Fruits Rice



Soak the rice in water to cover for 30 minutes and drain. Heat a pan until hot. Add the oil and onion. Cook, stirring until the onion is lightly browned. Add the ginger, garlic, chillies, salt and pepper and cook for 10 seconds. Reduce the heat to medium low. Add the rice and cook stirring, until the mixture is well coated with the oil. Add water and bring to a boil. Cook, uncovered, over medium-high heat until the liquid is nearly evaporated. Reduce the heat to low, cover and simmer until the rice is tender, about 15 minutes. Remove the rice to a serving platter. Sprinkle the prunes, appricots, nuts, green onion and coconut over the rice. Serve with plum sauce on the side.
