Mint Leaves Powder

Separate the tender mint leaves from the bunch individually. Wash and wipe with a cloth. Dry by spreading on a clean cloth. When it is completely dry, roast it in a heat shallow pan till it becoems crisp. Remove from fire and powder it. Dry roast black gram dal separately. Fry red chillies alone in oil. Powder everything together. At the end add drumstic leaves powder, salt and tamarind. Pound well. Store in clean dry jar.
