Mango Pulp

Select fully ripe mangoes without any blemishes. Wash thoroughly, peel and cut the juicy flesh from the seed. In a large saucepan, put the pulp and water. Bring to boil, add sugar and citric acid and boil for 10 mins, mashing the mixture well with a mallet. Cool. This puree can be stored in fridge or frozen in the freezer.
