Cut the vegetables. Wash and clean. Add all other ingredients except mustard and urad dal. Pressure cook till 2-3 whistles or till done. Remove from the cooker and stir well. Now heat oil and add mustard. When splutters add urad dal. Let the dal turn brown, then add this to the kootu. Boil the kootu for 5 minutes and serve.
