Khao Phat Khamin

Heat oil in large kadai. Add garlic and ginger. Fry till fragrant. Add nutranuggets and stir for a minute. Add sweet potatoes, red pumpkin, onions. Stir fry for a few minutes. Cover and reduce heat. Cook till almost done. Add tomatoes, red chilli powder, turmeric powder. soya sauce, black pepper and salt. Mix well. Add and mix cool rice. Cover and cook on low heat for 5-7 minutes for the flavor to set in the rice. Serve hot garnished with spring onions.
